I love recreating my favorite restaurant recipes at home. This delicious madeira chicken is no exception. It is a very popular menu item at Cheesecake Factory, but I think this homemade version is even better, and only costs a fraction of the price to make.

This dish is so easy to make even for  the beginner cooks, but the taste is absolutely gourmet and restaurant worthy. Succulent chicken breast is sautéed till golden brown and served with divine Madeira cream sauce with mushrooms and asparagus and melted mozzarella cheese.

Madeira cream sauce is simply heavenly. Earthy, woodsy mushrooms, aromatic onions and garlic help  building up the flavors of the sauce.  We use sweet madeira wine to deglaze the pan as a base for the sauce together with beef stock and cream.

Emerald green blanched asparagus adds a fun pop of green color and a veggies element to the dish. I also pound the chicken to ensure even cooking and tenderness. Melted under the broiler mozzarella cheese is a cherry on top for this dish. Serve it with creamy mashed potatoes for an irresistible, elegant dinner and impress your loved ones.
