Recreating Asian takeout staples at home can be officially considered my hobby, aside from wining, dining and blogging. Before I started eating and cooking more consciously, I probably single-handedly made revenues for my local Chinese takeout.
This teriyaki chicken noodles are a great and quick way to fix yourself a nice dinner on a busy day.
I like using soba noodles which are a kind of buckwheat noodles. They are gluten-free and vegan-friendly. But you can also use regular egg noodles or rice noodles, any kind is pretty great with the homemade teriyaki sauce.
If possible, it’s best to throw in everything for teriyaki sauce and to set the chicken to marinate in the morning or during the day so that once you’re home for the night, you just take everything and cook it, and you spend all of 10-15 minutes on it before your dinner is ready.
Make sure you boil your soba or the noodles you pick just like it says on the back of the box. Egg noodles, rice noodles and soba, although they look pretty much like spaghetti pasta, cook much faster and can easily get mushy if you overcook it.
Serve this with a side of kimchi or a regular tossed salad. Other things that look good in this dish are bamboo or bean sprouts, chopped chives and sesame seeds. I hope you enjoy this delicious dish!
