Better then a take out, this chicken Chow Fun is a delicious stir fry noodle dish made with wide rice noodles, chicken and vegetables.  Very similar to chow mein in a sense that it is a cooking method where you stir-fry the rice noodles with the meat  of your choice and vegetables as well. The difference is the noodles.

Chow Fun are made with rice when Chop Mein are wheat noodles. They are flat and wide  and  either  come  fresh  or  dried. The dried noodles  are soaked in a boiling water  until they are soft before frying.

This easy stir fry can be made in a wok or a large skillet if you have electric stove. There is no sacrifices in taste or texture.

The sauce is stellar, it is sweet and savory with rich umami flavors. The key ingredient to the best results just like in a Chinese restaurant is to use high quality oyster sauce. Made with oyster extract and sugar, the sauce will give your dish a deep umami taste with a hint of sweetness.

There is also Shaoxing wine and light soy sauce for even more complexity, and a dash of dark soy sauce to add the appetizing caramel color.  The sauce serves as a delicious chicken marinade as well.

You can add any of your favorite asian vegetables to the dish like bean sprouts, bamboo shoots, peppers, corn slices mushrooms, spinach and onions. Fresh aromatics like garlic, ginger and green onions are essential for the best results as well.
