Chicken Mei Fun is an easy and healthy Chinese stir fry dish made with rice noodles, a bounty of colorful vegetables and thinly cut chicken. Mei Fun which is translated to rice noodles or rice vermicelli are thin noodles made from grounded rice and water.

I love recreating my favorite take out dishes at home and this chicken Mei Fun is not an exception. This dish is so fragrant and bursting with flavors.

This stir fry is healthy and nutritious, in comparison to other Chineses dishes. It is wholesome and is filled to the brim with fresh vegetables and protein rich chicken. The sauce is light and savory and not overpowering at all. This dish is also gluten free.

It is very easy to make, as long as you have some basic chopping skills. The only ever challenging part is to properly chop all the vegetables for the dish.

In order to achieve that authentic, signature look of the chicken I suggest freezing it for about an hour and then thinly slice agains the grain. You can also cube the chicken if that’s what you prefer, but when you thinly spice it, it gives it more surface to coat with mouthwatering sauce.

The sauce is made with just a a handful of ingredients that everyone has in their pantry. A simple combination of soy sauce, sesame oil, brown sugar and oil with an addition of aromatics like green onions and ginger.
