This simple but delicious omelette delivers amazing flavor and texture in a package of just 5 basic ingredients. Eggs, milk, ham, onions and bell peppers all come together in this wonderful timeless omelette combination to excite your taste buds.

It is truly one of my favorites! You can serve it by itself, but it is also great to make quick egg sandwiches with. Having ham as one of the ingredients makes it a complete meal. It could be served as a healthy hearty breakfast, nice brunch offering or even light dinner.

Those 5 ingredients are a traditional, classic way to make a western omelette. But you can tweak it to fit your personal preferences or whatever other ingredients sitting in your fridge with no destination. I love adding mushrooms and fresh tomatoes, as well as cheese. You can use any kind of cheese as long as it melts nicely. You can substitute ham for breakfast sausage or bacon for a more complex and  intense flavor. If you are not a big fan of onion try scallions instead, they have a milder taste and will give an omelette a nice pop go color.

I am using milk, instead of water, together with my beaten eggs for a more creamy and rich omelette. And it comes out more fluffy and airy as well.

There are 2 ways to making this versatile breakfast favorite: you can add all the ingredients to the eggs and then just  fry in butter on both sides, slicing to the desired portions afterwards. Or you can  fry the egg mixture first and then fold your omelet around your filling of ham and veggies.

It is also very important to use high quality eggs like cage-free or organic. They taste so much better, and since eggs take center stage in this dish you want the good stuff. Enjoy your omelette!
