I know what you’re thinking right now. I thought exactly the same thing when I first came across this recipe. There’s absolutely no way pancakes could be made with just 3 ingredients and still taste good, or even look like pancakes and have a pancake-like texture.

But here it is, and these puppies are a living proof of the fact that 3 ingredient pancakes exist. Not only do they exist, they are delicious, they are vegan, they are gluten and dairy free. Intrigued yet?

Here’s the deal behind this recipe. For pancakes, you generally need a liquid base and a binding agent to keep you batter together while you fry it. Eggs and some kind of milk usually act like that. But for diets that exclude both, there are a few alternatives, luckily. 

Bananas are actually a great binding agent. They are gooey enough, they cook well and they also provide natural sweetness so that you don’t even have to use sugar if you avoid that.

Oats are rich in good fiber and elements, they are gluten free and they have a lovely grainy flavor. Pick your dairy free milk of choice and you’re good to go. My faves are coconut milk, or almond milk, or, if I happen to have both in the fridge, I use a mix of both. They also add a lovely light flavor to the pancakes, which, combined with banana flavor, creates an exceptionally tasty combination.

Now, all you have to do, once you mix your 3 ingredients, is dollop out the pancakes into a skillet and give them a frying. Just follow the simple steps below!
