I once went to a friend’s party and she’d made a most amazing snacks – a plate of little canapes with berries and pieces of fruit and what looked like tinies pancakes ever. They were so cute, so delicious when dipped in whipped cream and syrup, you can probably guess which dish was wiped out first on the table.
These silver dollar pancakes are cute miniature pancakes that will make kids squeal with delight. The adults too, for that matter. You can use them as a snack, instead of traditional crackers, to serve with a variety of tiny toppings, or as a canape dish.
Unless you have a pancake griddle with absolutely tiny pancake cups, you’ll have to use a skillet and make those babies by hand. It’s not that hard actually, just use a tablespoon or even a teaspoon to make those. They will also fry faster than the big pancakes. And you can bake up to 10 of those puppies in a single batch, if you really are making them small.
These are excellent for serving at kid parties, but adults love them as well. I often use those instead of crackers just for the sake of creativity and they are always a hit and a crowd pleaser. Some of the topping ideas I love include salmon caviar and butter, cream cheese and salmon, prosciutto and cheese or fruit and cheese.
