These aromatic onion pancakes are widespread all over China. You can actually buy them on your way to work or back home since you can see them everywhere. Making this unusual pancake is an exciting and unforgettable experience. Besides, you can change the recipe according to your own taste which is absolutely impossible in restaurants! Basically, the recipe is quite different even in different parts of China. For example, in northern Chinese provinces these pancakes are thinner and contain less oil but in the south they’re usually thicker and crispier due to a larger amount of oil.

To make these yummy pancakes you need to prepare both boiling and cold water for the dough. Be attentive to your dough while cooking, cover it with wet cloth to prevent drying out. Start by mixing salt with flour in a large bowl. Make a small hole in the center and pour a little hot water in it. Wait for 10 minutes and stir the cold water in. Take the dough and form a ball, knead until smooth. Cover the rest for 25 minutes.

After resting, divide the large dough into 4 pieces. Roll each of them. Brush with some oil, add chopped scallion and Chinese herbs. Roll the dough into a cylinder and make a snail-shaped dough. Cover with wet cloth and wait for 10 minutes.

Gently roll out the pancake. Put some oil on a pan and place your pancakes on it. Pan-fry each side on middle fire for 1-2 minutes.
