Pancakes are a very, very old dish. It’s a historically proven fact that humankind has been making dishes similar to pancakes, that is, frying batter in a pan over heat, since times too old to remember. 

If we look at the majority of modern pancake recipes, they mostly include baking powder, an addition, introduced not so long ago. How did our ancestors made do without them and still had their pancakes rise? You can be sure it’s possible to cook easy pancakes without baking powder.

One thing is baking soda. It can give a much better rising kick than baking powder, but needs acid to be activated. You can either mix it in a tablespoon with a bit of apple cider vinegar or lemon juice or swap the regular milk for sour milk or buttermilk.

I’ve tried various combos and come to the conclusion that gluten-free flours don’t rise all that well without the help of either baking soda or baking powder, even if you do use a sour base and give the batter enough time to ferment, but the pancakes are still pretty good to taste, especially if you don’t make your batter to thick and make them thin.
