I love this simple but nutritious and healthy chicken vegetable soup. So easy to whip up on a busy week nite. This quick-cooking meal is loaded with all kinds of healthy vegetables and protein rich chicken. If you are on detox diet you have to eat veggies other and hearty food so this great soup recipe is definitely what you need.

It is especially great for people with picky little eaters. Kids love this soup and it is a great way to add vegetables in their diets. It is healthy but satisfying and tastes incredible. Cook vegetable chicken broth if your kids are sick and sit at home instead of school.

All basic produce ingredients that are readily available year round like onion, garlic, celery, carrots, green beans, potato, frozen corn, chicken and canned tomato all come together to create this healthy but hearty soup. It is also a great way to use your leftover baked dinner chicken and tastes great with rotisserie as well. I just love how easy it is to make and that it doesn’t involve any complicated prep and tons of dirty dishes afterwards. Just start chopping onions and carrots and you will not notice how the soup will be cooked. Flavor will fill your kitchen.

Besides traditional ingredients I use frozen corn and green beans because my daughter likes those. But there are all kind of vegetables you can use in this soup. The sky is the limit. You can add broccoli, cauliflower, zucchini, frozen peas, butternut squash or any other ones your heart desires. This soup is a vitamin rich nutrient bomb that is ultra-comforting at the same time. I cook all the ingredients in savory tomato broth to intensify the flavors of summer even more. The bouillon is a separate dish that can be served in a restaurant. You will literally never have leftovers after your dinners cause no one can stop eating.

You can also adapt this soup for the slow cooker. Simply throw all the ingredients together and cook between 2-4 hours.
