I love a delicious hearty soup! There is just something so comforting about a bowl of hot flavorful soup on a cold afternoon. Especially if it is perfectly cooked sweet potato soup prepared with the help of blender until it gets creamy. Perfect recipe of potatoes dish.

This fragrant sweet potato and carrot soup is all of the above. Luxuriously creamy with silky smooth texture you wouldn’t believe there is no cream in it. It is just, well, yumaliscious!

Packed with nutrients, sweet potatoes are healthy and colorful addition to any meal. They are true stars in this soup. Blended with carrots, a hint of curry powder and chicken broth they truly create a scrumtious soup. Pepper and fresh onion make the soup slightly spicy. Olive oil and a piece of pepper are optional.

They add lovely autumn sweetness and irresistibly rich velvety consistency.

This soup is so buttery and filling but most importantly incredibly healthy. You can eat as much as you want without having to worry about your waste size. Sweet potatoes slices are a rich source of fiber as well as containing an array of minerals and vitamins. Thats exactly what everyone needs during cold-weather flu season months.

A hint of curry, that what makes this soup for me. Just a touch really deepens the flavor. The unique combination of sweet and savory spices gives the soup its rich earthy flavor with a hint of brightness. Sprinkle a teaspoon of chopped parsley if it is desired.

And this soup is so pretty and vibrant. I love the bold orange of sweet potatoes and carrots.

You can absolutely adjust the recipe and change the mixture to fit your personal taste. Here is couple of suggestions. Use coconut milk or cream instead of chicken broth for a more creamy texture and sweeter exotic taste. You can also add nut butters like almond and cashew in saucepan. It is better to quickly blend them first before cooking. Dont forget to salt the water. The flavors of sweet potato and carrots balance great with nutty rich butters, plus added protein. They are great complimenting tastes.

This aromatic soup is one of my favorites. I make it year round when I fell like eating something healthy and lighter but filling and comforting at the same time. Sprinkle a teaspoon of chopped parsley before serving if it is desired. Hope you enjoy this recipe.
