Sticking to a gluten-free diet can be a bit hard, because before you start, you may not even realize how many foods that we eat on a regular basis every day actually contain gluten. Like bread and everything made with bread.

This gluten-free zucchini bread is an excellent alternative for gluten-intolerant people. It’s delicious, slightly sweet, it packs a lot of good fibers and other vital nutrients, and it actually features a wholesome serving of vegetables.

When zucchinis are in season, it’s my favorite gluten free bread to bake. I grow some in my garden or buy them off a farmer’s market when they are still tiny and tender. Those little puppies make a perfect zucchini bread.

My secret ingredient for this particular gluten free zucchini bread recipe is raw almond meal, which I use apart from a regular gluten-free flour mix. I usually make my own – you can just take raw, dry almonds and process them on high in a food processor. You can select your preferred settings and grind the almonds coarse or very fine.

They will add a lovely flavor and texture to the bread and the overall result is simply gorgeous. If you feel like making it extra sweet and more like a dessert, a dairy free cream cheese frosting is a way to go.
