Save yourself a trip to your neighborhood take out place and make this easy shrimp Pad Thai at home. This dish is bursting with asian inspired flavors from the delicious made from scratch sauce, full of vegetables and carb comforting noodles. And the best part is that this restaurant favorite can be thrown together in just a half an hour.
I love recreating my favorite Thai dishes at home and this shrimp Pad Thai is no exception. The rainbow of vegetables makes the dish look so pretty and appetizing.
Since it is essentially a noodle dish it is important to pick the correct type. I use Thai rice noodles that I get in the international isle of my grocery store. I also prefer buying already peeled and deveined shrimp as a convenient shortcut to save time.
We start the dish by soaking the noodles and mixing the sauce together so they are ready to go when the dish is ready to be assembled. Next step is the shrimp, it cooks pretty fast so make sure to keep an eye on it at all times in order to be able to pull them out of the pan once they turn pink. Scramble the eggs then sauté the vegetables. Now your dish is ready to be put together. Add all of the ingredients back into the pan, coat with the sauce, and cook for another couple of minute for all the flavors to come together.
Your delicious homemade pad Thai is ready to be served garnished with cilantro and dry roasted peanuts.
