Since it is essentially a noodle dish it is important to pick the correct type. I use Thai rice noodles that I get in the international isle of my grocery store. I also prefer buying already peeled and deveined shrimp as a convenient shortcut to save time.

We start the dish by soaking the noodles and mixing the sauce together so they are ready to go when the dish is ready to be assembled.
