These Italian style stuffed pork chops are bursting with flavors. They are stuffed with sundried tomatoes and mozzarella, seasoned with traditional Italian herbs and baked to golden brown crispy perfection.

This is probably my favorite way to cook pork chops. The cheese and the sundried tomatoes add such a lovely twist to the dish and combined with meat juices, it is simply perfect.

I even had to look into making my own sundried tomatoes, just so that I can make these chops more often, as store bought sundried tomatoes are pretty pricey.

I usually select boneless pork chops for this recipe and trim them off the fatty parts, simply because pork meat itself contains more fat than beef and much more than chicken.

This recipe calls for spinach. During summer, I use fresh spinach from my garden or from nearby farmers’ markets. But I also tried making those with frozen spinach, and it worked okay. The only thing is to defrost spinach before hand and remove all the excess liquid.

As far as cheese goes, mozzarella is most certainly not your only option. You can add any cheese that you like and that is good for melting, like cheddar or provolone. A sprinkle of parmesan will add a lovely flavor.
