Braised meat is one of my favourite kinds of cooking meat. It unfailingly produces the tenderest, melt in your mouth results and creates the most intense flavors.

This braised pork shank, slowly cooked with crushed tomatoes and herbs and red wine, is everything you can desire in a meat dish. It’s hearty, it’s bursting with flavors, the meat literally falls off the bone, so tender it is.

I love serving it with steamed rice or mashed potatoes, because the braise is so good, I can actually eat it like soup. Leftovers are perfect for making pulled pot sandwiches. That is, if you have any leftovers, we usually don’t.

The secret to making this pork divine is this. First, you have to sear your meat brown on all sides and only then cook it on slow with wine, veggies and herbs till it’s ready.

I also love using fennel for this recipe. If you don’t have fennel at the moment, a mix of dill, tarragon and anise will also do well.

You can also throw asparagus, leeks, turnips or daikon in the mix.

This dish take a bit of time to cook, but it’s absolutely worth it. So, it’s perfect to have as a slow lazy summer lunch or dinner. And, last but not least, this recipe is practically a wallet saver, because pork shank is a very, very budget friendly kind of meat.
