The zucchini grilled cheese is a healthier, low carb version of you classic grilled cheese sandwich. We are going to make our own zucchini flatbreads to use in place of regular bread. Zucchini sandwich bread is airy and fluffy and light, but satisfying, full of fiber and comforting at the same time. Perfect for the upcoming bikini season. This bread could be made low-carb, gluten-free and Keto. Just use the almond flour in place of the wheat flour for a protein boost and to omit the carbs.

The zucchini sandwich bread is very similar to the zucchini pizza crust recipe I have on this website. It is sturdy and holds up beautifully to the melty cheese. So no fall-apart, soggy grilled cheese sandwiches.

It is very easy to  make as well. Just under 45 minutes you will have a wholesome, nutritious bread that you can enjoy absolutely guilt free.

You can use any cheese that you like in this zucchini grilled cheese recipe. Sharp cheddar, creamy mozzarella work great. I also love gruyere cheese. It is nutty, earthy and more assertive, mature flavor compliments the delicate flavors of the zucchini bread wonderfully.

You can cook your grilled cheese a traditional way: spreading butter or mayonnaise on the outer part of the bread and cooking it in the skillet until the cheese melts. Or opt up for a healthy version just melting the cheese under a broiler or in a panini press.

This healthy but delicious grilled cheese is a definite crowd pleaser. It ihad been a big hit with me for a while and I am sure to be making it again pretty soon.
