I just love the heart warming effect of a hot bowl of hearty soup. I make soups all the time during cold weather months. But this one my daughter deemed her favorite. And it takes a lot to make a six year old love soup.

Loaded with wholesome vegetables, fiber rich brown rice and lean white chicken that is high in protein this soup is as healthy as it is delicious. Milk adds a touch of sweetness and creaminess.

You can substitute for wild rice for even more impressive health benefits, just remember it takes even longer to cook then brown rice. The textures also vary greatly. Brown rice being tender and fluffy and wild rice nutty and crunchy.

I use basic onions, garlic, celery and carrots as the aromatic foundation of this dish. Those are all available year round vegetables that add ton of flavor to the soup.

But you can absolutely throw in any veggies you like to make it extra nutritious! Earthy Mushrooms and herbaceous kale work great. I love throwing frozen peas in the end just to cool the soup down and add a vibrant pop of color.

It is very easy to make as well and is a great way to use any leftover cooked rice or cooked chicken. Just add them in the end to warm through.

Dried thyme and parsley add a subtle fragrant hint that makes the soup smell very appetizing. Your kitchen will fill up with an irresistible aroma of freshly made soup that could rival a restaurant meal.

And just when you thought it couldn’t get any better this  dish is also very filling and unexpensive to make. No fancy ingredients needed.
