Have you ever wondered what would happen if meatloaf and lasagna had a baby? I know, I know it sounds ridiculous, but honestly, when I cook this lasagna stuffed meatloaf, I giggle to myself, because all I can think of is that this is lasagna and meatloaf lovechild.

Seriously though, it’s amazing. It has layers of seasoned beef and melted mozzarella and fresh, creamy ricotta cheese and it’s flowing with delicious meatloaf sauce, spiced with traditional Italian herbs. 

The making of this recipe is pretty simple, though, a bit more than you would expect from a traditional meatloaf where you just mix everything together in a single bowl. Okay, you’ll need two bowls for this meatloaf, one to mix the cheese stuffing and one for the actual meatloaf, but that’s about all when it comes to complicated parts.

Another tricky part is the rolling. I’ve given detailed instructions on how to roll this baby below, but even this can be skipped. If you’re making this meatloaf in a loaf baking dish, you can just do layers, like with traditional lasagna. A layer of meat mix, then mozarella, then ricotta and parsley mix, rinse, repeat.
