My daughter likes cheeseburgers and she’s quite impartial to meatloaf. So, I tried combining the two to up the possibility she’ll eat meatloaf at all. And guess what, it worked like magic. 

This cheeseburger meatloaf is a fun combination of a classic kid favorite and a traditional mom and pop dish. Bake it portion sized and you can even throw it on a bun with some lettuce and tomatoes for a neat sandwich.

It’s also very easy to make. I usually cut the cheese into cubes rather than using grated cheese because this way they create little pods of melted cheese inside the meatloaf which are delicious and kids love the texture. 

I use panko breadcrumbs for this one because they provide a bit of airy texture that’s very neat when combined with rather dense beef and the chopped bacon. All in fall the texture turns out very diverse and deliciously chunky.

This meatloaf is excellent on its own or with traditional meatloaf side dishes of mashed potatoes and veggies, but do also consider using it instead of hamburger steaks for your cheeseburgers. An unexpected twist for any party or grill cookout. I hope you enjoy the recipe!
