Instant Pot has become a very welcome addition to my kitchen equipment, ever since I started using it, I’ve been saving really big amounts of time, especially cooking recipes that otherwise take long to cook in the oven or on the stove.

This Instant Pot meatloaf is exactly what makes my Instant Pot precious to me. Pressure cooked for less than half an hour, this dish is quick and simple. In fact, it’s so simple, kids can do it themselves. 

All you have to do is mix all the ingredients for the Instant pot, make a little foil bowl and set up the Pot. Make sure you don’t overdo it mixing the ‘dough’ of the meatloaf. It shouldn’t be too dense. Also, if you allow the mixture to rest in the fridge for a bit, the breadcrumbs will become fluffier and the meatloaf will be softer and airier.

As you can cook several dishes at a time in Instant Pot, I like steaming potatoes or other veggies on the bottom so that I can have a side dish served with the meatloaf. Broccoli, green beans or cauliflower or any mix will do just fine.

You can make your own sauce for the topping of this meatloaf, or, if you’re feeling lazy, topping it with ketchup or any ready made tomato sauce is absolutely fine, just find your own combo and go with it.
