I absolutely love Southern American cuisine for its comforting, homemade style and the fact that pretty much every recipe can be described as ‘hearty’. Indeed, I always get the feeling that there’s a lot of heart put into every recipe.

This Southern meatloaf is no exception. Made with ground beef and seasoned breadcrumbs, a hearty portion of vegetables, this meatloaf is everything you’ll be looking for in comfort food.

Meatloaf recipes are great for being so simple to cook, even people who feel very uncomfortable around the kitchen can ace them. This Southern meatloaf can be easily cooked by a kid. 

All you have to do is basically throw everything together and mix by a bare hand. I recommend dicing onions and other veggies in a food processor to ensure that the texture is even, smooth and no large lumbs are formed. 

You don’t even have to bake it in a loaf form, simply line a baking sheet with foil and form a loaf by hand instead. 

This meatloaf is excellent with other Southern staple side dishes, such as mashed potatoes, green beans, baby carrots. I hope you enjoy it as much as I do!
