Having to live with allergies or gluten intolerance is bad enough. Having to look for quick and easy recipes for a gluten-free diet that don’t also cost a fortune to make can be jus too hard. 

That’s why every gluten-free recipe that doesn’t involve intricate grocery lists and spending a lot of money is a treasure. This gluten-free and dairy-free meatloaf is exactly that – inexpensive and quick to make from pantry staples and a few ingredients that are easily available at nearest large grocery chain store.

This gluten-free meatloaf is as easy to make as any other meatloaf, so it’s pretty much foolproof. Because I’m usually using gluten-free flour, such as almond flour, or gluten-free breading or even gluten-free oats, I always add a bit more veggies to the mix than I do for regular meatloaves, otherwise the meatloaf may turn out a bit too dry. 

For this particular recipes I add zucchini and onions. I also tried making it with finely chopped mushrooms and it worked great. If you want to make it a bit more moist and flavorful, adding a couple tablespoons of gluten-free ketchup is also a very good idea.

This gluten-free meatloaf goes well with keto-friendly or gluten-free side dishes such as steamed or grilled vegetables.
