Light and fluffy, pillow like soft frosted sugar cookies with colorful buttercream frosting and a rainbow of sprinkles are every kids favorite. These delicious sugar cookies are baked with sour cream and a little bit of cornstarch to keep the cookies irresistibly soft after baked. They bake up with a puffy center but flatten slightly once they cool down. You take a bite and they just melt in your mouth. Simply heavenly.
The simple buttercream frosting is made from scratch and can be colored any tint you wish to make them look absolutely pretty and super appetizing on the plate. I also love to add a kaleidoscope of rainbow sprinkles since they are my daughter’s favorite.
The cookies are perfect for any occasion since you can customize the colors of the frosting. They are fantastic to offer to your adult guests with tea and coffee or with a glass of milk for the little guys.
To make the cookies is a breeze, the cookie dough comes together in a stand up mixer very easily. The dough is sticky and you can either just drop it onto the baking sheet in large tablespoonfuls and flatten with the back of the spoon, or chill the dough for at least 3 hours in the fridge and roll it out with a rolling pin then cut into the desired shapes. Follow the instructions below to create these amazing cookies.
