I don’t know why this wonderful cake is called Mississippi mud cake. Thereys’ nothing muddy about it, unless you link all the chocolate it drowns in with mud in your mind, but to me this cake is pure. Absolutely pure amazingness. This Mississippi mud cake recipe is great for any day but the dinner time is perfect for some cakes or cookies or brownies to sweeten the mood with classic sheet dough, creme and rich frosting. You can decorate it with pecans or some of coconut or peanut or the bites of cookie if you like to eat nutfree desserts. It’s up to you.

There are an abundance of chocolate cake recipes of various complexity out there, but to me this one beats many of them because it combines my favorite chocolate and marshmallow, has a unique viscous texture, is moist and easy and fast enough to make.

You can use any chocolate cake recipe for the baked cake base that you like. The key word here is ‘easy’. There are also plenty of off-the-shelf chocolate cake mixes if you don’t feel like making it from scratch. They will also do, because the most important thing about this cake is the butter, fudge and the melted marshmallow and chocolate topping. You can also choose any of your favorite frostings or don’t use frosting at all.

If you feel like it needs even more chocolate – you can decorate it with chocolate chips or grated chocolate. Because there is no such thing as too much chocolate, obviously.

I usually use mini marshmallows for the top layer, but if you can’t get your hand on any, you can use regular sized ones, maybe cut them into smaller pieces though.

You might think there has to be some sort of a secret to this recipe, but there isn’t one. There aren’t too many steps or tips, just be sure you don’t overdo the marshmallows and only let them slightly puff and melt.
