This traditional Japanese Pork dish, fried in Panko bread crumbs, has been extremely popular of late because of the Yuri on Ice anime. Katsudon, which is Katsu pork served with udon noodles, is one of main characters’ favorite dish, so go figure.

I love figure skating, I love Yuri on Ice, so, Katsu pork was sold on me immediately. And now I understand completely why it’s so popular, it’s absolutely delicious.

Well, Panko bread crumbs make very many things delicious, but this Katsu pork also had a great sweet and sour sauce and the meat itself is thin, crispy on the outside and tender inside. Perfect, to my taste.

Of late, I’m making this more often than any other kind of pork. Because it’s so simple, quick and well, for all the reasons mentioned above.

I usually use tenderloin or even pork chops to cook this Katsu pork. I almost always use a meat tenderizer to pound the meat pieces so that they are thin and soft. Especially when I use pork chops. For this particular dish I also cut off all the excess fat.

Other than that, just follow the simple instructions below to cook the pork and the sauce to perfection. Served over udon noodles or steamed rice, this is my absolute version of comfort food. I hope you enjoy it as well!
