I love peaches to pieces! Whenever they are in season, I gorge on them and feel no shame whatsoever. They are so soft and juicy and they smell divine, and I love everything peach.

Needless to say, peach cake is something I make a lot. I’m not a southern belle even by a long stretch, but whenever I make this wonderful fresh peach cake, I most certainly feel like one.

I usually add a mite of lemon juice and zest to the batter because they emphasize the peach flavor so well. The same goes for vanilla extract. As a result, you will have a moist, soft, fluffy delight, full of fresh peach flavors. You will have real trouble trying to stay away from it!

It’s also great that the prep time is so short, so that you can whip it together, put it in the oven and do your business, so it’s a real time-savior when you need to make a dessert but also have a lot of other things to do.

And another little pleasant surprize, when peaches are in season, they are very cheap, so the cost of making this cake will be so low, it only adds to its value. A perfect, low-cost dessert variety.
