There’s nothing that screams comfort food at me more than deep fries chicken, with some kind of creative, crusty, golden breading.
This potato chip chicken is exactly that. Tender strips of chicken breast are deep fried, baked or pan fried dipped in sour cream and crushed potato chips. If you take flavored potato chips, you’ll get an immense additional flavor boost.
I usually bake those puppies, because they pack a lot of calories as they are and deep frying them will increase the amount of calories exponentially. But I have to say, when bakes, they are just as delicious.
I love making those with ruffles or similar ribbed potato chips. They are crispy on themselves, and yet they will absorb sour cream very well and stick to the chicken greatly, while also giving a great crisp. The sour cream will also make chicken extra tender, if you dip your chicken in sour cream and let it sit for half an hour or so.
