Coconut Custard Pie is like a slice of summer in your plate. My grandma used to make it for very special occasions and when she wanted to cheer someone special up.

And if this coconut custard pie is not a great way to cheer yourself up with a load of fruity flavor, nutty texture and creamy custard, I don’t know what is.

Grandma made the crust for this pie from scratch. I tried both from scratch and store bought crusts and I’m telling you, in the end it doesn’t even matter much, because the filling is so gorgeous. To me, it reminds of Almond Joy candy, sans the almonds.

In fact, you could actually add shredded almond on top to make this pie even more lavish.
It’s one of the simplest pies to make, ever and it yields such excellent results, once, when I was seriously down, I made it three times in a row. And guess what, it did work its magic, I did feel better, if a little heavier.

I also tried making muffins with a bit of crust on the bottom and the filling on top, and they were also a blast, so you could probably try that too.

Serve it with coffee or tea or as an exquisite breakfast meal. I hope you have as much fun with this pie as I do!
