Double recycling is my way of life. So, whenever I have over ripe bananas I loath to throw away, I make banana bread. But on a rare occasion my banana bread doesn’t get eaten in an instance and I actually have leftovers, I make banana bread pudding.

This quick, easy and scrumptious dessert, made with leftover banana bread and bananas packs so much flavor, you wouldn’t believe it. 

Okay, let me share a little secret now. You don’t have to use banana bread only to make this lovely pudding. In fact, any kind of sweet or just regular white bread will do. I once even made this with leftover cinnamon rolls and it was a blast. The only bread I probably wouldn’t use for this pudding is sliced sandwich bread of a kind that can be kept for a long time

So, if you have anything leftover from you visit to the bakery, this is your best choice. 

The highlight of this recipe is certainly the homemade caramel sauce. It’s gooey, it’s buttery, the color is simply fantastic, and when it’s drizzled over the pudding the result makes my mouth water even as I’m writing this. 

If you want to add a little bit of crunch to the texture, chopped walnuts, almond or pecans go great with this. Serve this as a quick desserts, as a coffee cake or as a bit of a sweet fix on a weekend. Enjoy!
