I usually go for canned enchilada sauce and just so that I don’t have to bother with wrapping, cook these enchiladas as a casserole. It’s still yummy. The kids love it.
If you don’t have a Mexican cheese mix at hand, this can easily be swapped for any melting cheese such as cheddar, mozzarella, provolone or any other that you like.

I usually make my own ground beef and keep it refrigerated in small lumps, each lump is enough to make nachos or spaghetti with sauce or tortillas. Or this enchilada casserole. So, I use a lump of my frozen ground beef, defrosting it right at the frying pan. This makes things a log easier – and you can also start your dinner without having it planned in advance.
