I think having a simple and delicious casserole recipe up your sleeve is a lifesaver. When you have to go to a cookout and don’t have much time or money to spend on your bring-along dish, when kids have friends over, or when you’re lazy and just want to watch your favorite show with a bit of comfort food.

This potato casserole has it all. The gooey melted cheese, creamy, soft potatoes and a crispy crust to die for.

The recipe is pretty simple too. You will need several medium sized potatoes of any kind. Or, if you’re just not feeling like it, use frozen hashbrowns, that’s what I do.

Buf if I use regular potatoes, I prefer medium sized yellow potatoes of the starchier varieties. You can also use canned cream of mushroom or cream of chicken soup, either is pretty darn good if you ask me.

The cornflakes are an absolute must if you want an extra crispy golden brown crust. It’s such a fine idea to top a casserole that’s all creamy and soft on the inside with something so crunchy that I absolutely insist on not giving it up.

This recipe calls for cheddar cheese, but I have to tell you, any melting cheese you like will do fine, such as mozzarella or provolone. If you want a bit of a tang, add a dash of more spicier cheese, such as parmesan or gorgonzola.
