Chinese cuisine boasts a load of healthy and hearty soup and beef recipes and this is one of them.
This Chinese Beef Noodle soup is totally on my list of perfect lunches somewhere close to the top. It has everything I’m looking for in a lunch meal. It’s balanced out, with a good carb base, noodles, it has meat and vegetables, it will keep me warm and energized. Not to mention it’s delicious and full of flavors.
It’s also quite quick to make, especially if you have all the ingredients for the soup cooked in advance or store-bought. Cooked beef and beef stock can be kept refrigerated or eve frozen for quite a while, fresh veggies won’t take long to cook at all, so do the noodles.
All you have to do is cook the noodles till they’re soft, add veggies, meat and spices and let it soak up for a few minutes. Bingo!
You can also make this soup from scratch, this way, everything will be deliciously fresh. I usually go with a chinese spice mix for this one, but I do recommend adding it to taste, as it may be a little on the hot side.
You can also add a variety of fresh veggies like chinese cabbage or bok choy, shredded carrots, leaks, various kind of sprouts.
Try making this for lunch and you will see that this hearty, healthy, light on calories dish fills you up greatly and keeps your energy running till evening.
