Baked potatoes are an excellent side dish. They are very filling, but not packing a lot of calories themselves, unless you load them with fatty toppings. They taste delicious and the variety of toppings you can serve them with makes them very versatile. You won’t get tired of eating them fast.

So, we’ve established that baked potatoes are awesome. But they have one serious drawback. The baking just takes too long. If you’re cooking for a family or for several people, baking half a dozen of potatoes will take you over an hour. But what if you’re just making a dinner for yourself?

There’s an excellent solution to this problem and it’s called microwave. Popping a potato in microwave and cooking it will take less than 10 minutes. Enough to do some stir fry. Or maybe you just want a baked potato for lunch?

If your microwave allows it, you can cook several potatoes in it. The timing is as follows – 6-7 minutes on high for a single potato, about 10 minutes for two and 15-16 minutes for 3 or 4 potatoes. All you have to do is poke them a few times with a fork before you start cooking. When they’re done, they should be mushy enough to open up on top when you squeeze them gently.
